Not like Mom's carrot cake ...

unless your mom was from Singapore.


I'm not sure why this is called carrot cake, since there isn't anything carroty about it; just a plain omelet on top of some cubes of what seemed to be rice starch, with crunchy fried shallots on top and a blob of hot sauce. It was tasty, though, and filling, and cheap.

it doesn't look entirely UNlike carrot cake, though. at least in this picture.
I love carrot cake and also omelettes, so it all sounds good to me.

It is actually turnip / white radish grated and then mixed with rice flour mixtured. Then the thick mixture is poured in a round pan and steamed to form the carrot cake. The carrot cake is cut up into small bite-sized pieces and stir fried in eggs and grease. I think the reason they call it carrot cake is probably in chinese language turnip is literally translated as "white carrot".

Elyani is exactly right. It's normally called turnip cake in Australian Chinese restaurants, but I suppose the translation got a little garbled in Singapore.
